1. ELEGANT SALMON DINNER
Salmon with dill sauce
This is not really a recipe but a method, secret and easy
(don't tell him how you made it):
Ingredients:
-Fresh salmon steaks
-Tub of dill dip- find it in the salad section or near
the sour cream
Wash fresh salmon. Arrange on greased broiler; top
generously
with dill dip. Broil til fish flakes easily.
Don't overcook or it
will be dry. That's it!

Asparagus Almandine
Ingredients:
-Can of premium canned asparagus, white or green
(Or steam fresh spears in a little
water)
-1/4 cup slivered blanched almonds
-Butter
-1 chopped hard-boiled egg
Heat up asparagus, or steam fresh. Saute almonds
in a little butter (watch carefully, they scorch easily).
Place hot asparagus in serving dish, top with chopped
egg and hot almonds

Parslied New Potatoes
Ingredients:
-12 or so small new red potatoes
-2 tblsp. fresh parsley, chopped
-1/2 stick butter
Scrub the potatoes well. If desired, peel in one ring all
the
way around each potato. Or leave skins on if you
prefer.
Boil in saucepan of salted water for 15-20 mins,
til tender.
Drain, return to pan, toss with parsley, butter
and fresh ground
pepper.
Simple yet succulent!

Strawberry shortcake
Ingredients:
-Bakery-bought pound cake
-1 basket fresh ripe strawberries
-1/4 cup sugar
-1 can whipped cream (not artificial)
Prepare the strawberries ahead of time and let them
steep for
at least 2 hours: Wash, hull and quarter the
berries. Place a third
of them in a small mixing bowl, and
crush with a potato masher or
meat tenderizer. Add the
rest of the quartered berries.
Sprinkle
on the sugar and
mix well. Allow to marinate.
Cut a thin slice of
pound
cake,
place on dessert plate.
Spoon strawberry mixture
onto
the
cake, and top with
whipped cream. Very light and
tangy.

2. SURF 'N TURF DINNER
Grilled tenderloins wrapped in bacon
Ingredients:
-2 tenderloin steaks 1-1/2 inches thick (ask the
butcher)
-2 strips bacon
-Bernaise sauce; Buy bottled or make at home:
1/2 cup red or white wine, as desired
2 tblsp. tarragon vinegar
1 tblsp. finely chopped onion
1/4 tsp. coarse grind pepper
1/4 tsp. chopped tarragon
2 egg yolks, beaten briefly in a
small bowl
1 stick melted butter
In skillet, cook bacon til halfway done; still limp. Wrap
around the
raw steaks and secure with wooden toothpicks.
Grill to desired doneness,
and
place on plate, next to the
steamed lobster tail.
Now make the sauce; Combine all
sauce ingredients
except yolks and
butter, in small
saucepan. Cook over
medium heat, stirring constantly,
until reduced by half.
Remove from heat and cool. Then,
return to low
heat,
and add yolks and butter a little at
a time, while beating
briskly
with a whisk. Immediately
spoon onto the steaks.
Also makes excellent
dipping for
the lobster.

3. TANGY PORK FEAST
Pork chops Shanghai
Ingredients:
-3 tblsp. soy sauce
-1 tblsp. brown sugar
-1 tblsp. vegetable oil
-4 medium lean pork chops
-1 medium onion, thinly sliced
Mix soy sauce, sugar and 1/2 cup water in a small bowl.
Put
oil in large
skillet over med-high heat. When heated,
add the
4 chops and brown
on both sides. Remove chops
to a plate,
leaving the oil juice in the
skillet. Add sliced
onions and saute
til edges are light brown. Put the
chops
back in the pan on the
onions and pour the soy sauce
mixture over
all.
Cover and cook
slowly, turning once, for 5 minutes.
Watch it, if you
burn it, it's
ruined. Uncover and cook,
basting, for another minute. Place
chop on plate and spoon
on the carmelized onion-soy mixture.

Stewed apples
Ingredients:
-4 tart green apples
-2 tblsp. butter
- 2 tblsp. sugar
-1/4 tsp. cinammon
Peel, core and cut apple into quarters. Melt butter in
saucepan. Saute the apples in the butter over medium
heat until just
tender. Sprinkle sugar and cinnamon over
apples and toss lightly. Do not
overcook this or it will be
mushy.

Bananas Foster
Ingredients:
-4 tblsp. brown sugar
-2 tblsp. butter
-1/4 tsp. cinnamon
-2 ripe bananas, quartered
-2 oz. rum
-1 oz. banana liqueur/ or crème de banana
-2 large scoops vanilla ice cream
Melt butter in skillet. Add brown sugar and cook to
medium paste
(do NOT scorch). Add cinnamon and stir
well. Add banana liqueur
and stir to make syrupy. Add
banana and saute til just tender.
Pour rum over all and ignite with match (at table). Baste
flames
with the syrup until flames go out. Place scoop of
ice cream in
flat serving bowls. Spoon on the bananas and
plenty of syrup. Aspectacular New Orleans treat!

4.REGAL BRITISH REPAST
Roast beef, Yorkshire Pudding & gravy
Ingredients:
-Beef roast- standing rib, top round, or eye of round
-Salt and coarse ground black pepper
-Pudding; Electric mixer required (handheld is
fine)
-7/8 cup flour
-1/2 tsp. salt
-1/2 cup milk (room temp)
-2 eggs (room temp)
-1/2 cup water (room
temp)
-1/2 stick butter
-Gravy:
-2 tblsp. butter
-2 tblsp. flour
-1 cube beef bouillion, prepared, or
canned beef
consommé
Preheat oven to 550°. Rub beef roast
with salt and
pepper. Place
on a rack set in roasting pan. Place in pre-
heated oven, then immediately
reduce the temp to 350°.
Bake about 20 minutes per lb. or 160° with
meat
thermometer. Set milk, eggs and water out to warm to
room temp.
Pudding- Combine flour and salt in large bowl. Stir in
milk. Beat 2 eggs
in small bowl til fluffy, then beat them
into the batter. Beat the batter
well with electric mixer
til large bubbles rise to the surface. Place 1/2
stick
butter in lasagna-sized baking dish, heat in oven, with
the roast,
until butter is melted. Then, pull the oven rack
out with the dish still on
it, carefully pour the batter into
the dish, and push back into oven.
Bake the pudding in the
oven until puffy and golden brown, about 20-30
minutes.
Now make the gravy- take drippings from the roast
pan
and put in a
skillet. You need about 2 tblsp. total grease;
if you don't have enough
drippings, add butter. Heat in
skillet over med heat, gradually adding
and stirring in the
flour. Stir constantly and let the paste cook a little
without burning. Gradually add 1 cup hot beef bouillion
or consommé,
while constantly stirring. Continue to stir
and cook til the gravy is
thickened. Season to taste with
salt and pepper.
The pudding acts as your starch, cut into squares, slice
the beef roast
against the grain as thinly as you can.
Load up the plate with beef and
pudding, then spoon
gravy over all. Okay, so this one's a little more
complicated. But every good cook needs to learn how to
make a beef
roast and gravy, right? This meal is worth
the time and effort!

5.CHICKEN DELIGHT
Baked oriental chicken
Ingredients:
-8 favorite chicken pieces
-Marinade:
-1/2 cup soy sauce
-1/2 cup grapefruit juice
-1/2 tsp. sugar
-1/2 tsp. ground ginger
-2 tblsp. vegetable oil
Marinade the chicken pieces, turning occasionally, 1-2
hours, or overnight. Remove from marinade. Bake in 375°
oven 1 1/2 hours,
turning frequently and basting with
leftover marinade. Quit adding
marinade 30 minutes
before done (marinade had raw chicken in it
and must be
cooked thoroughly). Don't let this burn, it ruins the
delicate tastes.

Pasta pesto
Ingredients:
-1/3 cup olive oil
-1 clove garlic, minced (we love bottled
garlic)
-1/4 lb linguini or angel hair noodles, cooked
al dente
-1/4 cup chopped basil
-1/2 cup grated parmesan cheese
-salt and pepper to taste
Place olive oil and garlic in skillet. Saute over medium
heat until garlic is tender. Add basil and saute briefly.
Add drained
cooked pasta to skillet and toss well. Add
salt and pepper to taste.
Top with parmesan cheese.

Fire and Ice Vegetables
Ingredients:
-1 green pepper
-1 cucumber
-4 ripe tomatoes
-1 red sweet onion
-Dressing:
-3/4 cup vinegar
-1 tsp. celery salt
-5 tsp. sugar
-1/8 tsp. mustard seed
-1/2 tsp. salt
-1/8 tsp cayenne pepper
-1/8 tsp. black pepper
-1/4 cup cold water
Quarter the tomatoes (skin if desired), peel cuke and
slice
thinly,
slice pepper into strips, and slice onion into
thin rings. Arrange the
vegetables in a flat glass dish
(lasagna sized), each veg in a layer. Place all dressing
ingredients in a saucepan, bring to a boil and
stir. Pour
dressing over all. Cover and chill, or can be eaten
immediately.

Bread pudding with rum sauce
Ingredients:
-1 loaf french bread
-1 quart whole milk
-3 eggs
-2 cups sugar
-2 tblsp. vanilla
-3 tblsp. butter
-1 cup raisins (optional)
-Rum sauce:
-1 stick butter
-1 cup sugar
-1 beaten egg
-1-2 tblsp. rum
Soak bread in milk; crush with hands until well mixed.
Add eggs, sugar,
vanilla and raisins, and stir well. Melt
butter in a lasagna pan in 350°
oven. Pour the bread
mix onto the butter and bake til firm and lightly
browned (20-30 minutes). Cool in refrigerator. When
ready to serve,
cut into squares, top with rum sauce and
heat briefly under the broiler.
Rum sauce: Melt butter in saucepan on medium heat, add
sugar and stir,
heat til thoroughly hot. Quickly add in
the beaten egg, whipping quickly
with a whisk. Cool. Add
rum to taste. Spoon over the bread pudding.

6. REAL MEN DO EAT QUICHE
Manly bacon & cheese quiche
Ingredients:
-1 frozen 9" pie shell, thawed
-3 strips bacon, cooked til crisp, and crumbled
-1 1/2 cup grated swiss or sharp cheddar cheese
-1 cup light cream (whole milk will do)
-3 eggs
-1/2 tsp grated nutmeg
-pinch cayenne pepper
-Salt and pepper to taste
Preheat oven to 350°. Sprinkle bacon over
pie crust.
Top with
grated cheese. Combine milk, eggs and
seasonings and beat
well. Pour egg mixture over cheese
in the pie. Bake 30 minutes,
or until set and light brown.

Spinach & mushroom salad
Ingredients:
-1 bunch or bag spinach
-4 oz. fresh sliced mushrooms
-2 small green onions, sliced
-1/2 cup crumbled feta or blue cheese
-2 chopped boiled eggs
-1/2 cup large Garlic croutons
-dressing: make in a clean mayo jar to store in
fridge;
shake to mix:
-1/3 cup olive oil
-juice of 1 lime
-1 clove minced garlic (use bottled)
-dash worchestershire sauce
-pinch salt and pepper
Wash spinach well and pat dry. Tear out and discard
tough stems.
Tear spinach into bite sized pieces in salad
bowl. Chill well. Just before
serving, add all other
ingredients, and toss with dressing.

Apple crisp
Ingredients:
-5 cups (about 4 large) tart green apples, peeled,
cored and
sliced
-3/4 cup flour
-1 cup sugar
-1/2 tsp. cinnamon
-1/4 tsp. salt
-1 stick butter, cut in small pieces
Preheat oven to 350°. Butter a medium baking dish,
spread the
apples in it. Sprinkle 1/3 cup water over
the apples. Combine the
flour, sugar, cinnamon, and salt
in a mixing bowl. Mix in the butter
pieces with your
hands until it turns into coarse crumbs. Spread
over top
of apples. Bake for about 30 minutes, or until crust is
browned. Can be served with heavy cream, whipped
cream, vanilla
ice cream, or au naturel.
