1. STEAK ON THE
BARBY
Marinated London
broil
Ingredients:
-1 1/2-pound top-round London broil (about 1 1/4
inches
thick)
-Marinade:
-1/3 cup olive oil
-1/4 cup dry red wine
-1 1/2 tblsp. Worcestershire
sauce
-2 tblsp. Dijon mustard
-1 tsp. honey
-4 large garlic cloves, minced
-4 tablespoons balsamic vinegar
-Salt & pepper
Mix up marinade in small bowl. Place steak in glass dish
or large zip-loc
bag. Pour marinade over. Marinade in
refrigerator 2-3 hours or overnight.
Grill to desired
doneness. Slice against the grain as thin as possible. Yum!

Charcoal roasted vegetable packets
Ingredients:
-3 or 4 of your
favorite vegetables:
-sliced squash
-sliced onion
-sliced mushrooms
-new potatoes, cut in rounds
-asparagus
-green beans
-carrot coins
-butter
-salt & pepper
You might have done this while camping, as a kid. They
are simple, yet
tasty. Prepare them the day before the
picnic. Tear off two generous
squares of heavy-duty foil,
and lay
on top of each other, for each serving.
Place desired vegetables
in the middle of the foil. Pat
with butter, salt &
pepper. Start to fold up the foil to
make a packet, but add 2 tblsp. of
water to it
first,
then fold over and crimp securely. Place on the grill
over hot
coals for 15-20 minutes. Succulent steamed
veggies!

Roasted corn on cob in husks
Ingredients:
-Raw fresh corn
cobs in husks
-butter, salt & pepper
Pull husks back from the top of ear, leaving the leaves
attached.
Carefully remove all the silk from cobs. Rinse
ears thoroughly in
cold water. Spread some butter on
the cob, salt and pepper.
Then, pull the husks back over
the cob. Wrap each ear in heavy
duty foil. Refrigerate
until ready to leave for picnic. Roast on
the grill 4-6"
above glowing coals. Turn occasionally and cook
for
15-20 minutes.

2. DELI
DELIGHT
Marinated sweet onion and tomatoes
Ingredients:
-2 large ripe tomatoes, cut into strips
-1 medium sweet Vidalia or purple onion, sliced thin
-1 large garlic clove, minced
- 1/2 tsp. salt & pepper to taste
-1/4 tsp. italian herbs (bottled in the spice section)
-2 tblsp. fresh lemon juice
- 1 tsp. white-wine vinegar
-1/4 cup olive oil
Place marinade ingredients in covered jar or plastic tub
and shake
well to mix. Place tomato and onions in glass
dish. Pour marinade over
all, cover, and refrigerate
overnight. This is awesome in your pita
pockets or wraps,
with the meat and cheese.

Pineapple & oranges Kirsch
Ingredients:
-2 cups fresh pineapple chunks
-1 cup navel orange sections, halved
-2 tblsp. Kirsch
Mix fruit together in small container,
sprinkle with the Kirsch. Enjoy.

3. FRENCH
COUNTRY PIQUE-NIQUE
Cold roast chicken with
herbs
Ingredients:
-Plump roasting chicken
-3 cloves garlic
-2 bay leaves
-3 tblsp. melted butter
-1/2 tsp. each salt & pepper
-1/4 tsp. each marjoram, sage, thyme, oregano & basil
Wash chicken well and pat dry. Cut the
garlic cloves in
half and rub
down the chicken with them. Then put the
garlic and bay leaves inside
the cavity. In small bowl,
stir all the other ingredients (butter and
spices)
together. Drizzle 1 tblsp. of the butter mixture around
the
inside of the cavity, then spoon most of the remaining
mix over the
outside of the chicken.
Preheat oven to 375°. Place a rack in a roasting
pan.
Place chicken breast side down on the rack. Bake 45
minutes, then
turn breast side up. Baste with remaining
butter mixture. Bake another40-45 minutes until juices
run clear and leg joint moves easily. Cool,
place on plate
and wrap in foil. Refrigerate over night for best flavor,
and serve cold on your picnic.

Homemade spiced lemonade
Ingredients:
-2 cups lemon juice (20-24 lemons, squeezed)
-4 cups sugar
-2 cups water
-8 cloves
-1/2 cinnamon stick
-Lemon rinds, from 8 lemons, cut in wide strips
-2 bottles club soda
In a saucepan over medium heat, dissolve sugar in water.
Stir constantly.
Add the lemon rinds, cloves and
cinnamon stick. Turn up heat and bring
just
to a boil,
stirring well. Cool, then
add squeezed lemon juice.
Refrigerate
overnight. Strain out the rinds, cloves,
and
cinnamon. Keep theconcentrate in a container on ice. To
serve, pour the juice
over ice in a
tall glass, and add
some club soda to taste.

Strawberries Grand Marnier
Ingredients:
-Basket of sweet ripe strawberries
-1/4 cup sugar
-1 cup Grand Marnier liqueur
Wash and hull the strawberries, leave whole. Place in
small
plastic covered bowl. Sprinkle with sugar and pour
in the
liqueur. Mix and let chill and marinade for at least
an hour.

4. ELEGANT
ANTIPASTO PICNIC
Jug Sangria
Ingredients:
-1 bottle Chablis or Burgundy, to your taste
-2 tblsp. Grand Marnier liqueur
-1 tblsp. sugar
-10 seedless white grapes, halved
-4 orange sections, halved
-1/2 Delicious apple, chopped
-5 strawberries, halved
Mix all together in pitcher, refrigerate overnight.

Brandied peaches
Ingredients:
-Big mayo jar and lid (thoroughly washed in hot water)
-5 fresh ripe peaches
-1 Pint brandy
-1 cup sugar
Peel and stone the peaches; quarter them. Pack them into
the jar.
Cover each layer with a thick topping of sugar.
When jar is full,
pour in the brandy. Let steep in the
refrigerator for several days.
